I recently recreated the recipe again to celebrate Okja’s second birthday. I can’t believe two years have flown by with this little girl in my life. She’s silly, smart, and has a really big personality. This past year we’ve seen her bossy side come out, she likes to give our other dogs a hard time but also loves to cuddle with them. She’s really just the best little girl we could have asked for.
I wanted to come up with a special Peanut Butter Pupcake recipe to celebrate Okja’s BIG life!
The actual Peanut Butter Pupcake is so simple. I wanted to add a little something extra so, I topped the Peanut Butter Pupcakes with pureed strawberries and a little warm peanut butter. The dogs loved it!
This recipe only made 4 Pupcakes perfect for my squad, but they will store in the fridge for up to a week – don’t top any extra cakes with peanut butter or strawberry puree until you’re ready to serve.
I used my silicone muffin liners for my four Pupcakes, but you could easily use a mini muffin pan as well. You will be able to create more Pupcakes with a mini muffin pan. Just keep an eye on the baking time if you use a mini muffin pan instead of a standard cupcake pan.
What You’ll Need for these Pupcakes
1/2 Cup of Quick Oats, 1/4 Cup of Creamy Peanut Butter (make sure it doesn’t contain Xylitol and try for single ingredient peanut butter), 1/4 Cup of Unsweetened Apple Sauce OR 1 Egg. I used 4 fresh strawberries and a little bit of water for the purée. For the peanut butter drizzle I just warmed up a few extra spoonfuls of peanut butter.

Ingredients
1/2 Cup of Quick Oats
1/4 Cup of Creamy Peanut Butter + a few tablespoons for melting over top (Make sure it does not contain Xylitol.)
1/4 Cup of Unsweetened Applesauce OR 1 Egg
Fresh Strawberries for the Puree (I used 4)
Directions
- Preheat your oven to 350 F
- Combine Quick Oats, 1/4 Cup of Creamy Peanut Butter (make sure it doesn’t contain Xylitol), Unsweetened Applesauce (or 1 egg). The dough will be crumbly and that’s okay! If you want a smoother consistency just mix in a few table spoons of water. Allow the dough to sit for about 5-10 minutes. This will allow the oats and liquid ingredients to combine.
- Press your dough into your cupcake liners. I filled my silicone liners up about half way.
- Bake for 20 minutes. Oven times may vary – I would double check them at 15 minutes to make sure the edges aren’t overly browned. Allow to cool.
- Toss your strawberries in your blender and puree them until they’re completely smooth and set aside. You can add a little water if you’re having trouble getting a smooth puree.
- Warm a few spoonfuls of peanut butter int he microwave. I put 3 heaping spoonfuls in a coffee mug and heated for 30 seconds. Heat in additional 15 second increments until the peanut butter is smooth enough that you can easily drizzle or smooth over the pupcakes.
